Malva pudding

What is it?
Malva pudding is a sweet pudding of Cape Malay origin. It contains apricot jam and has a spongy caramelized texture. A cream sauce is often poured over it while it is hot, and it is usually served hot with custard and/or ice cream.

Biltong
Biltong
What is it?
Biltong is a dried meat similar to beef jerky. Typically, the beef used in biltong is thicker and dried more slowly than American jerky. Biltong strips are cut long and around 1-inch wide, and flavored with vinegar and spices.
Where to get it?
Biltong is common throughout southern Africa, especially Botswana.
Doro wat
What is it?
Doro wat is a spicy chicken dish stewed in berbere spices and served at most holiday celebrations. All wats (stews) are traditionally eaten with injera, a spongy flat bread made from the millet-like grain known as teff, and shared in a communal meal.

Nyama choma

What is it?
Nyama choma is a platter of roasted meats served at celebrations. Goat and beef are most common, but chicken (kuku choma) and fish (samaki choma) are also popular. The meats are usually served with ugali, (a bit like grits) and kachumbari, a tomato salsa.

Kapenta with sadza
What is it?
Kapenta, comprising two species of small freshwater fish, is crisp-fried and served with maize porridge, known as sadza. You can eat it dried and fresh, or stewed with tomatoes, onions and groundnut powder, and served with fresh greens. The traditional way to eat this dish is to scoop up the sadza with your hand and to dip it or roll it in the accompanying fish and relishes.
